Late-night eating is not always about pizza, burritos, gyros and hotdogs—sometimes you want real, quality food. Those in the know about late-night dining are typically in the service business themselves, because after a night full of kowtowing to their own crowd, why not have an awesome burger or mussels and frites after most kitchens are closed? Not to mention a quality and reasonably priced boutique wine and beer selection. That’s why staffs from Alinea, Blackbird and other gourmet restaurants are known to chill at Rootstock after work. Now open four years, this Humboldt Park pioneer helmed by the three wine-bar-pro co-owners recently snagged new executive chef Michael Simmons from Lula Café.
