OK, no one is curing fish like Snaggletooth. And no one is turning out such bright, supple fish, all from a shoebox kitchen in Lakeview. Owners Jennifer Kim and Bill Montagne are retooling the ancient art of fish curing and infusing it with cool concoctions like elderflower, mezcal and Earl Grey tea. The fine-dining alums source their fish straight from the purveyor and check it twice to make sure it’s sustainably raised—so hamachi from Japan, trout from Scotland, you get the picture.
